Peaches ‘N Cream Pie

Tonight my husband and I got together for dinner with the group of volunteers who are helping spiff up the offices of the NGO he works for. They are working long, hard days to make the place suitable for hosting donors and other guests as well as a more pleasant environment for the folks who work there day in and day out. My contribution to the dinner was the Lemony Blueberry Tart (from the Blueberries Galore post) and a Peaches N’ Cream Pie.

Sorry I didn’t get a picture of the pie before it was all eaten but trust me it was fantastic!

Peaches N’ Cream Pie
Serves 8

1/2 C. Fage plain, fat free Greek yogurt
1/2 C. plain, fat free regular yogurt
2/3 C. sugar
1 egg
3 T. flour
1 T. lemon juice
1/4 t. salt
Combine and mix well.

3 C. peeled, diced peaches (5 med.)
9-inch unbaked pastry shell
Add fruit to the above yogurt mixture and pour into the pastry shell. Sprinkle with ground cinnamon.
Bake in preheated 400 degree oven for 25 minutes. Reduce oven temp to 375 degrees and bake for 25 more minutes.
