This is a healthy, easy breakfast cooked in the microwave. It has plenty of low fat protein, too! Pour 1/4 cup of egg beater into a bowl, add one whole egg, a sprinkle of dry ranch dressing mix, a big pinch of 2% cheddar cheese, and a tablespoon of water. Beat together with a fork until well blended. Microwave on high for 45 seconds, stir, microwave 35 seconds, stir again. Eat!!

This can be made up in a larger batch to last a few days so that all you have to do is pour it in the bowl and microwave.
