This recipe works for those who are gluten intolerant and/or vegetarian. It’s a nice replacement for a traditional pasta salad and is higher in protein and fiber but really tastes good! I like using quinoa because it has a higher protein count than any other grain. It’s around 16.2 percent protein compared to 7.5 percent for rice and 14 percent for wheat. Quinoa is also a complete protein and has a pleasant nutty flavor and slightly crunchy texture. Quinoa is simple to prepare. Simply rinse it thoroughly before adding to boiling water in double the amount of the quinoa you’re cooking. Cook for 15-18 minutes and drain in a collander.

Greek Quinoa Salad

1 C. quinoa
1 sweet red pepper, diced
1 large onion
1 medium egglant
1/2 C. kalamata olives, pitted and sliced
1/2 C. reduced fat feta cheese
1 C. grape tomatoes, halved
1/2 C. Greek salad dressing

Greek Salad Dressing

1/2 C. olive oil
2 T. balsamic vinegar
4 T. lemon juice
2 cloves garlic, minced
1/2 Tsp. salt
1/2 teaspoon oregano
black pepper to taste

Place all of the ingredients except the olive oil into a medium bowl. Slowly whisk the olive oil into the vinegar and lemon juice mixture in order to emulsify ingredients into a think dressing. Makes 3/4 cup of dressing.

1. Cook the quinoa and place in a large bowl.
2. Slice the onion and eggplant into 1/2 inch slices and grill until done. Cool and then dice.
3. Mix the onion, eggplant, sweet red pepper, kalamata olives, feta cheese, tomatoes and 1/2 cup of the Greek salad dressing into the quinoa. Chill and serve garnished with additional feta cheese.
