Oatmeal Chocolate Chip Cherry Cookies
In my quest to use the eight pounds of dried cherries I brought home from Michigan, I thought I’d see if they’d work added to an oatmeal chocolate chip cookie. After all, cherries and chocolate go well together, right? Well, I think they turned out great! Chewy and moist! The folks at church loved them, too.
Ingredients
1 C. butter at room temperature
1 C. brown sugar
2 eggs
2 T. milk
2 t. vanilla
2 C. flour
1 t. baking soda
1 t. baking powder
1 t. salt
2 1/2 C. old fashion oats
2 C. mini chocolate chips
1 C. chopped, dried sweet cherries
Preheat the oven to 350 degrees. Spray baking sheets with Pam. In a large bowl, cream the butter and sugar until light in color. Beat in the eggs one at a time then add the milk and vanilla. Blend well. In a smaller bowl stir together the flour, baking soda, baking powder, and salt. Gradually beat the flour mixture into the sugar and egg mixture until incorporated. Stir in the oats, chocolate chips, and dried cherries. Chill the dough for 30 minutes for a puffier cookie. Drop by heaping teaspoon onto the cookie sheets. Bake in the upper third of the oven for 10-12 minutes. Makes 8 dozen small cookies.

I always use parchment paper to bake cookies. No spray, no crisco, no cleanup.
