Seared Lamb Grilling on Top Rack

This is the best lamb I’ve ever eaten . . . beating a fabulous lamb dish I had on vacation in Tuscany! The honey in the marinade along with the other ingredients creates a crispy, carmelized exterior that is just fabulous! The night my son prepared this we used a much smaller piece of lamb than the recipe calls for since it was just for the three of us. BTW, Costco carries great lamb! Great job on this one Matt!

Ingredients
5-6 lb. boneless, leg of lamb (or smaller)
1 bottle of Guinness beer
1/4 C. honey
2 T. olive oil
2 T. balsamic vinegar
2 T. dried oregano
1 med. onion, finely chopped
8 cloves garlic, finely chopped
1 t. salt
1/2 t. pepper
1 T. butter

1. Mix together all the ingredients except the lamb and butter in a mixing bowl. Place the lamb in a zip loc bag and pour the marinade over the meat. Squeeze the excess air out of the bag and seal. Marinate overnight and up to 24 hours in the refrigerator, flipping the bag over at least once if possible.
2. Take lamb out of the refrigerator 30 minutes before cooking to let it come closer to room temperature. Meanwhile preheat the grill on high. When the grill is heated, reserve the marinade, and sear the lamb on all sides until the outside is slightly carmelized. Turn the heat to medium-low and move the lamb to a higher rack and cook until desired doneness is reached. Medium to medium-rare is recommended.
3. While the lamb is cooking, put reserved marinade in a sauce pan and place over high heat. Once it reaches a boil, turn the heat to medium and reduce by at least half, until slightly thickened. Take off the heat, whisk in butter.
4. Once the meat is removed from the grill, let it rest for 10-15 minutes before slicing. Serve the meat with the sauce made from the marinade.
