Oven Roasted Vegies and Italian Sausage

It was a rainy day and on the cool side when I began craving oven roasted vegetables. I had turkey Italian sausage in the freezer and thought I’d try combining the two into one hearty recipe. This is very quick and easy to make and is really a one dish meal. I served it with fresh sliced tomatoes sprinkled with salt, pepper, and chopped rosemary.

4 Honeysuckle Turkey Italian Sausages, cut into fourths
1 sweet red pepper, cut into 1 inch squares
1 medium zuchinni, sliced 1/2 inch thick
1 large onion, cut into wedges and separated
6 small side of medium new potatoes, quartered
2 T. olive oil
2 T. balsamic vinegar
2 T. chopped fresh rosemary
salt & pepper to taste

Preheat oven to 450 degrees. Spray a large cookie sheet with Pam. Place the vegetables, 1 tablespoon of rosemary, and olive oil in a zip-loc bag and smoosh around until everything is covered with the olive oil. Dump onto the prepared cookie sheet. Place the Italian sausage pieces over the top of the vegetable mixture.

Place on middle oven rack and bake for 20 minutes. Remove from oven and if liquid has accumulated in the pan drain it off so the vegetables will brown. Turn over the vegetables with a spatula and return to oven for 20 more minutes. Remove from oven and immediately drizzle with 2 tablespoons of balsamic vinegar and sprinkle with the rest of the chopped rosemary. Toss gently to coat with the vinegar and distribute the chopped rosemary. Serves 4
