A Piece of Potato Gratin

Well, I got carried away at Costco again and bought a 15 pound bag of potatoes! My kids and grandkids were going to be in town and I knew I was going to make garlic mashed potatoes for one of the meals. I thought I’d give some to my mom and son and that would take care of the 15 pounds . . . WRONG! Even after they took what they wanted I was left with at least five pounds so thought I’d make Potato Gratin to get rid of some more. I still have some left to make Potato Soup . . . but that’s another post. This gratin is great with BBQ brisket and serves 4-6. BTW, this dish is great with the Oven BBQ Brisket!!

Ingredients
3 T. butter
4 large yellow potatoes, peeled and thinly sliced
1 small onion, thinly sliced
1 to 1 1/2 C. whole milk
1/2 C. grated parmesan cheese
salt and fresh ground pepper
2-3 T. fresh minced parsley

Butter a large casserole dish or 7 X 11 inch cake pan. Arrange a layer of potatoes, overlapping the edges slightly.

Top the layer of potatoes with 1/2 of the onions, 1/3 of the cheese, and 1/3 of the chopped parsley. Salt and pepper generously. Repeat using the rest of the onions in this layer. Top with the final layer of potatoes.

Heat the milk until it’s hot but not boiling and then carefully pour over the potatoes until it comes to the bottom of the top layer of potatoes. Top with the last of the cheese and parsley and then dot with the butter cut into pieces, and salt and pepper generously.

Bake in a preheated 350 degree oven for an hour. If you ended up with four layers of potato, bake an hour and 20 minutes. Serves 4-6.

    Sue, used this recipe for Christmas dinner. Turned out delicious! I actually used shredded mozzarella/parmagian cheese combo. I love the flavor that the parsley added. Thanks for sharing!
