PB&J Cookie Bites

Let's eat'em!!

This is one for the kids and the kid in all of us! What’s not to like about a peanut butter and jelly cookie? This version provides a little added crunch from the chopped peanuts the dough is rolled in before baking. The jelly provides a little color to your Christmas cookie platter as well. Bring out the child in you and give these a try!

1 1/2 C. Homemade Holiday Cookie Mix
1/2 C. creamy peanut butter
1 large egg, lightly beaten
1 T. water
1 t. vanilla
3/4 C. finely chopped peanuts
1/4 C. jam or preserves, any flavor

1. Preheat oven to 375 degrees.
2. Combine Homemade Holiday Cookie Mix, peanut butter, egg, water, and vanilla in large bowl. Stir until well blended.
3. Spray the palms of your hands with non-stick cooking spray and shape dough into 1-inch balls.
4. Roll the balls in chopped peanuts and place two inches apart on baking sheet sprayed with non-stick cooking spray.
5. Bake for 8-10 minutes or until lightly browned. Using the round handle of a wooden spoon, make an indentation about 1/2 inch wide in the center of each cookie while the cookies are still warm. Be careful not to poke the dent too deeply or the cookie will break in half. Fill the indentation with about 1/4 t. jam. Cool completely on cooling rack. Makes 2 1/2 dozen.
