Zero Point Italian Vegetable Soup

This is the time of year when it seems everyone is trying to shed a few pounds and we all need a go-to recipe to keep us on track. Well, this is the recipe for which you’ve been waiting! This is a hearty, thick soup that is full of nutritional value and very tasty. This is so good I will serve it even to those not trying to lose weight (I’d add a sprinkling of freshly grated parmesan cheese, however).

10 oz. baby spinach leaves
2 medium carrots, diced
2 stalks celery, diced
1 large onion, diced
3 garlic cloves, minced
4 C. vegetable broth
28 oz. can diced tomatoes (I used fire roasted)
1 bay leaf
1 T. dried basil leaf
1 t. dried oregano
1/2 t. red pepper flakes

Place everything into a crockpot; cover and cook on high for 5 hours or low for 8 hours. Remove bay leaf, stir and serve. Yields about 8 – 1 cup servings. 0 Weight Watcher points per serving!!

    Not much of a vegetarian in my former life but until I get in shape for space camp with my granddaughters, I am watching my weight and learning how to cook for one. I will definitely try a variant of this meal in my “coffee pot cooking”, not because it’s healthy, but because it looks good and I like all the ingredients so I can taste it already.

      P.S. Poppa John, I love your creative idea for cooking everything in a coffee pot!! This recipe will work, I’m sure. You’ll just have to scale the back the quantity. Let me know how it turns out.

    I modified this recipe to smaller portions for the coffee pot and it came out great. I brought the leftovers to work and those who tried it loved it. Yours was prettier because I don’t have the patience to really dice vegetables as the should be done. Since my coworkers never saw the picture of your soup they thought mine was fantastic.
