Spicy Breakfast Sausage

I have a friend who just discovered she is allergic to a bunch of different foods which makes it really difficult to use prepackaged foods and mixes or to eat out in restaurants. She came to stay with us for a week while in town on business and I wanted to be sure to serve her things she could safely eat. I thought I would make a rice recipe that included browned breakfast sausage but discovered that many of them have maltodextrin in them which is a corn derivative and corn is one of the items for which she has an allergy. So I decided to take matters into my own hands and find the recipe I have used in the past to make turkey sausage and just substitute ground pork for the turkey. This way I know exactly what is in the sausage! I have also made this with turkey and it is also delicious! This is adapted from the Fresh Start cookbook by Julie Rosso.

Ingredients
1 lb. ground pork (or turkey)
2 t. finely minced fresh sage
1/2 t. crushed red pepper flakes
2 T. finely minced garlic
1/4 t. ground cumin
1/2 t. fennel seeds
Pinch of ground cloves

1. Mix all the ingredients together in a bowl. Form into patties and brown on each side. If wanting crumbled sausage don’t make into patties and simply go to step two.
2. In a large nonstick skillet, brown the pork mixture over medium heat stirring to break up the pork, for about 8 minutes, until evenly browned. Use immediately or cover and refrigerate until ready to use.
