Caprese Salad

Caprese Salad
Usually caprese salad is made by layering sliced tomato, sliced fresh mozzarella, and basil and drizzled with olive oil, salt, and pepper. I only had grape tomatoes but have plenty of basil in my garden so this is what I came up with for this caprese salad.
Ingredients
2 C. grape tomatoes, halved
1/2 lb. fresh mozzarella cheese, cubed
1 T. balsamic vinegar
2 T. olive oil
1/2 t. mustard
1/2 C. chiffonade of basil
salt and pepper to taste
Place the grape tomatoes in a serving bowl and top with the mozzarella cheese. Whisk the vinegar with the mustard and then slowly whisk in the olive oil. Add salt & pepper to taste and drizzle over the cheese and tomatoes. Top with the chiffonade of basil.
