Grilled Eye of Chuck Steaks

How many of you are fans of NPR? It’s my radio station of choice and is the station I listen to on way to and from work every day. I learn something new almost every time I listen! Last fall I was listening to a local Kansas City program, The Walt Bodine Show, where they had an interesting discussion regarding cuts of beef. On the face of it, it sounds like a pretty boring show. I became intrigued by a listener, though, who called in recommending Beef Eye of Chuck steak for grilling. He praised its tenderness and flavor as well as the economy of this cut of beef. Wellllll . . . . I have to admit that I was skeptical! Like most folks, I am always up for saving some bucks so I decided to look for this cut and give it a try. First, I checked Costco but they didn’t carry it. Since Costco didn’t have it, I had to check out our local grocery chain, Hy-Vee. Success!! I had no trouble finding it. And it was only $2.99 per pound! At that same store sirloin steak is usually between $4.99 and $5.99 per pound. But! The cheap price is not worth it if the steak doesn’t taste great. The other night we had the chance to throw them on the grill and they were FANTASTIC!! Here is how I fixed them:

Beef Eye of Chuck Steaks
worcestershire sauce
Fresh ground garlic pepper

1. Place the steak in a ziploc bag.
2. Sprinkle generously with worcestershire sauce and garlic pepper.
3. Let marinate for 20 – 30 minutes and throw on the grill. Cook to desired doneness.
