Grilled Potatoes & Onions
This is standard fare at our house during the summer when we do a lot of cooking on the grill. I would have to say that this is one of our favorite potato dishes! I really like it because you cook it in a foil packet so there are no dirty dishes. I cut the foil packet open and we simply scoop the grilled potatoes onto our plates.
Ingredients
1 lb. of fingerling potatoes (cut the large ones in half)
OR
4-5 regular potatoes, sliced 1/2 inch slices
1 large onion, cut in half and thickly sliced and separated
2-3 T. olive oil
seasoning salt
pepper
1. Heat up th grill for 15 minutes.
2. To make foil packet, cut four pieces of aluminum foil 15 inches long. Place two pieces of foil shiny sides together and fold along the long edge 3 to 4 times to make one large sheet of foil. Do the same to the other two pieces of foil so that you end up with two large pieces of foil.
3. Place one large piece of foil on the counter, shiny side up and spray with Pam. Place the potatoes and onions on the foil.
4. Sprinkle liberally with seasoning salt and pepper and drizzle with the olive oil. Toss to coat the potatoes and onions.
5. Spray the shiny side of the remaining large sheet of foil with Pam and place shiny side down on the potato mixture.
6. Fold together all four sides of the foil sheets to create a packet around the potato mixture.
7. Place the packet on the grill and cook over medium heat for 15 minutes. Turn the packet over and grill another 15 minutes.
8. Place the packet on a plate and cut open with a knife or kitchen scissors being mindful of the steam that will escape.
Serves 4-5
