Grilled Vegetables & Steak

We’ve had a few days of nice spring weather before the latest snow storm hit. Since I love grilled food, I had to take advantage of those warms days and throw a steak and vegies on the grill! I’m posting this today in the middle of the snow storm in order to remind us that warmer days are ahead so just bookmark this for that day that is surely coming soon!! These are very simple to make and you can choose the vegies you like so be creative.

Ingredients
And assortment of vegetables:
1 red pepper
1 green pepper
1-2 medium zucchini squash
1 large onion
2 T. Italian dressing or olive oil
salt & pepper to taste

1. Cut the peppers into 4-5 large pieces.
2. Slice the zucchini into 1/2 inch slices.
3. Slice the onion into 1/2 slices.
4. Place the vegetables in a zip-loc bag with the Italian dressing or olive oil and salt and pepper. Squish around so the vegies are coated with the dressing and let marinate for a few minutes.

5. Place vegetables on a preheated grill and cook until done to your taste.
Serves 4
