Brussel Sprouts w/Lemon & Walnuts

Ok, ok, ok . . . I know that not all of you are fans of brussel sprouts but as many of you may remember, I am. So here’s another recipe for all you fellow brussel sprout lovers out there. The secret to the deliciousness of this dish is the contrast between the lemon juice and toasted walnuts. Trust me! It’s a great combination. By the way, I usually use frozen brussel sprouts because my grocery store carries petite ones, which are small and tender and not as strong tasting as larger ones. This recipe is adapted from The Omega Diet.

1 16 oz. pkg. of frozen petite brussel sprouts
2 T. olive oil or walnut oil
1 T. lemon juice (if I don’t have any lemons in the house I substitute balsamic vinegar)
4 T. toasted chopped walnuts*
Salt and pepper to taste

Steam the brussel sprouts for about 10 minutes. Toss them in the oil and lemon juice. Sprinkle with the toasted walnuts and salt and pepper. Serve.
Serves 4

*To quickly toast walnuts, place a single layer on a plate. Place in microwave oven and microwave on high for 1 1/2 minutes. Stir and microwave for another 1 1/2 minutes.
