Roasted Red Pepper Tomato Soup w/ Pesto Tortellini

Every now and then even the Faithful Foodie does not have the energy to cook up something from scratch. So this post is to illustrate that even when we’re having one of those days, we can come up with something pretty tasty by combining some convenience foods into something delicious. This soup is the kind of thing that can be whipped up if you have some basic supplies on hand like I write about in the “Building a Soup Pantry” post.

If you add a salad and some garlic bread to the menu with this soup, you’ll have a pretty darn good meal with little effort!

1 – 32 oz. carton of Roasted Red Pepper Tomato Soup
1 1/2 – 2 C. cooked pesto tortellini (or mini ravioli)
shredded parmesan cheese to garnish
a sprinkle of dried basil for garnish

1. Cook the tortellini according to package directions. Drain.
2. Heat the soup in a large sauce pan and add the cooked tortellini.
3. Ladle into bowls and granish with the parmesan cheese and basil

Serves 4
