Baby Lima Beans with Tomatoes & Sage

As many of you have probably figured out by now, I like a variety of vegetables. Some of you may put lima beans into the same category as brussel sprouts and not eat either one but I really like them both! When I make this recipe I usually don’t bother with another carbohydrate in the meal since beans are high in carbs. I simply serve these with some grilled meat and maybe some fruit for dessert for a very filling meal. We also like to pass the hot sauce with these beans to add an additional punch of flavor!

Ingredients
1 – 14 oz. pkg. frozen baby lima beans, partially thawed
1 T. minced garlic
1 T. olive oil
1 medium onion, diced
1 – 14 oz. can diced tomatoes (I used fired roasted)
1/4 C. water
1 1/4 t. dried sage
1/4 t. pepper
salt to taste

1. Heat the olive oil in a medium skillet. Add the onions and saute for a few minutes then add the garlic and saute until the onions are translucent.
2. Add the beans, water, tomatoes, sage, pepper, & salt and mix together.
3. Bring to a boil over medium heat.
4. Simmer for 20 minutes or until thick.
