Crustless Asparagus Quiche

I love quiche especially when I have nice fresh vegetables for one of the main ingredients. I do feel guilty eating it, though, because the crust is so laden with fat and, let’s face it, a quiche without cheese would be no quiche at all. Soooooooo . . . to assuage my guilt I sometimes make it without a crust. This also make it work for those who are gluten intolerant.

My inspiration for this quiche came from a partial log of leftover goat cheese, fresh asparagus that needed to be used, and the fresh grana padana cheese I had in the frig. I made this up for a light Sunday evening dinner (since we usually go out to lunch after church) and just served it with some fresh strawberries drizzled with balsamic fig reduction.

Asparagus quiche and fresh strawberries

2 T. olive oil
2 C. trimmed asparagus, cut into 1 inch pieces
1/2 C. red onion, diced
1 t. minced garlic
3 oz. goat cheese
1/3 C. grated fresh grana padana cheese (or parmesan)
1/2 t. salt, divided
1/4 t. freshly ground pepper, divided
3 large eggs
1 egg yolk
3/4 C. milk
dash of grated fresh nutmeg

1. Preheat oven to 350 degrees.
2. Heat the olive oil in a medium skillet and saute the asparagus and onion for 6-7 minutes. Sprinkle with 1/4 t. salt and 1/8 t. pepper. Add the garlic and saute another minute. Remove from heat.
3. Break the goat cheese into pieces and add to the asparagus mixture. Stir until the cheese is melted and coats the asparagus mixture.
4. Spray a pie plate or 1 1/2 qt. casserole dish with non-stick cooking spray. Spread the asparagus mixture in the pan or dish.
5. Beat the eggs, egg yolk, and milk until blended. Mix in the grated grana padana cheese and the rest of the salt and pepper and the fresh nutmeg. Pour over the asparagus mixture. Stir around a little to combine the egg and asparagus mixtures. Sprinkle with a little paprika for garnish.
6. Bake for 30 minutes or until the quiche is almost set in the middle. Remove from the oven and let cool for 5 minutes before serving.
