Grilled Pork Skewers

Mother’s Day is coming and rather than going out to eat, which is a big hassle, we usually grill out. This recipe is easy enough for someone with limited cooking skills to make, too!

We are beginning to have lots of good days for grilling here in Kansas City so when I saw the Cuisine Grilling magazine at Costco recently I purchased a copy. It contains over 100 recipes with many that I will try as weather permits. This dish is the first I tried and I thought it was excellent! The only thing that takes a little time is the chimichurri sauce but even it is easy to prepare if you have a food processor AND it can be made ahead of time which is always a plus! The sauce also keeps well for any leftovers you may have.

Indredients for the Chimichurri Sauce
2 C. packed fresh parsley (about two bunches)
2 T. chopped garlic
1/2 t. black pepper
1/2 t. red pepper flakes
Salt to taste
1/2 C. olive oil
1/4 C. white wine vinegar
2 – 4 T. water

Ingredients for the Pork Skewers
2 pork tenderloins (1 – 1 1/2 lbs. each)
12 strips of bacon

1. Mince the parsley, garlic, black pepper, pepper flakes, and salt in a food processor for the chimichurri sauce. Add the oil, vinegar, and water; process until blended. Reserve some of the sauce for serving at the table; set aside the rest for basting.

Chimichurri Sauce

2. Preheat the grill to medium.
3. Prepare the pork by trimming off the silverskin and fat then slice into 2-inch-thick fillets.
4. Wrap a bacon strip around each filet, overlapping ends by 1-inch. Trim the excess bacon.
5. Thread 3-4 filets on each skewer; insert a second skewer for stability. Brush meat with chimichurri sauce reserved for basting.

Bacon Wrapped Pork Skewers

6. Grill skewers, covered, for 4 minutes peer side, including the bacon sides and basting before each turn. Cook for a total of 16 minutes or until fillets reach an internal temperature of 145 degrees. Serve the skewers with reserved chimichurri sauce.
Serves 4-6
