Green Chile Sausage Breakfast Casserole

I have been making the same breakfast casserole for years for holiday breakfasts. Last year I had a breakfast meeting at a friends house and she made this version of breakfast casserole and I loved it. Sooooooo . . . I decided to go out on a limb and fix this one instead of the usual one for a family gathering. Now you have to know that this is very risky in my family because we take our food traditions very seriously!! If the fam didn’t like this, I’d never hear the end of it and every holiday they would taunt me with, “Remember the year mom made that awful breakfast casserole instead of the one we all like?” Well, my fears were unfounded and everyone loved this one. It’s our new family favorite and is destined to now make it onto the roster of our family food traditions.

6 English muffins, halved and buttered
10 large eggs
12 oz. shredded cheddar cheese
1 or 2 – 4 oz. cans of chopped green chiles
1 lb. browned and crumbled breakfast sausage
12 oz. sour cream

1. Place the buttered muffin halves butter side down in a greased 9 X 13 inch pan.
2. Mix the cheese, sausage, and chiles together and place half of this mixture over the muffins halves.
3. Mix together the sour cream and eggs and pour over the muffins.
4. Place the other half of the sausage mixture on top of the egg mixture.
5. Cover and refrigerate overnight.
6. Bake in preheated 350 degree oven for 45 minutes to and hour.
Serves 10-12

  2. Yum! How could anyone not like that? I think you made the right call. We always had a cheesy egg casserole on Easter Morning growing up (and sausage balls on Xmas morning for some reason). I think I might have to adjust a family tradition and make this version, though.

    Hey Faithful, I adapted this great breakfast dish for my turn with our camping group…dutch oven breakfast brunch. For the over night in the camping cooler, i used an oval foil pan lined with parchment paper that fit into the 14″Dutch Oven,next morning the only prep was firing up the coals, it worked wonderful and clean up was easy. I had to size down the reciepe to fit the pan about 3/4. I also used spicey hot italian sauage instead of green chiles. Great Fun and well recieved…..Thank you for the inspiration. MK

      I love it when folks can adapt a recipe to their specific needs! I’m so glad it worked for you and that everyone like it. I think the hot Italian sausage would be great . . . I’ll have to give it a try!

    Had a house full of company last weekend and made this casserole. It was a huge hit and I had to give up my printed copy of the recipe. Good job Faithful Foodie!
