Cherry Fruit Bars

These fruit bars are one of those “go-to” kind of recipes when you need a quick dessert or want to take something into work that people can eat with their morning coffee. This is an old recipe of my mom’s that I can remember her making when it was her turn to host her card club. They are very moist and flavorful and are great served with whipped cream, vanilla ice cream, or just plain. The only ingredient you need to keep on hand, other than standard baking essentials, is a can of pie-filling. You can use any flavor you like. I’ve made cherry, blueberry, and apple in the past and they’ve all been great.


1/2 C. butter, softened
1 C. sugar
2 eggs, beaten
2 C. flour
1/2 t. baking powder
dash of salt
1 t. vanilla
1 C. chopped pecans or walnuts
1 can of pie filling of your choice

1. Cream the butter and sugar together. Add the beaten eggs and vanilla and mix well.
2. Stir in the flour, baking powder, and salt and mix until blended.
3. Stir in the nuts until well incorporated.
4. Reserve 6 T. of the batter and evenly spread the rest in the bottom of a greased 9X13 inch pan.
5. Spread the pie filling on top of the batter then dab the reserved batter over that in a random pattern.
6. Bake at 350 degrees for 40-45 minutes.

    Hi Sue, This recipe looks great. Would love to try it. Can never remember is the flour mentioned Self Raising or plain. Our recipies always state what is necessary. There often seems to be some ingredient in US recipies that I don’t seems to be able to find here, but this one seems fine.
    I Remember our time together in Aust., with great warmth. Val

      Hi Val! It’s great to hear from you. All the recipes I post use plain old white flour unless I state otherwise. We don’t use self-rising flour much here so I would designate that specifically if it were needed. I still tell people about the Chinese massage you always treated me to when I visited! Say hi to Colin for me!
