Cheesy Ham & Corn Chowder

My husband works for a not-for-profit organization,Outreach International [3], that relies on volunteer help to put together their mailings. Just prior to Thanksgiving is when they have their biggest project so they always provide lunch for the volunteers. My contribution to the lunch buffet was this soup. I thought something hardy and filling would be good since they would all be working hard to get the mailing out. This turned out great so give it a try if you’re in the mood for a nice, hardy, warms-the-soul soup!

3 T. butter
1 medium onion, diced
5 T. flour
1 green pepper, diced
4 C. chicken broth or stock
8 new red potatoes, sliced
1 t. dried sage
1/2 t. black pepper
1 lb. cooked ham, diced
2 C. whole milk
1 C. 1/2 & 1/2 (or whole milk if you don’t want it this rich)
20 oz. frozen corn
16 oz. Velveeta cheese, cubed

1. Melt butter in a large saucepan; stir in onion and cook until tender.
2. Stir in flour and cook for a minute after a paste forms.
3. Add green pepper, chicken broth, potatoes, sage, and pepper; stir to blend in the flour mixture.

4. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
5. Add remaining ingredients; cook and stir until heated through, about 8-10 minutes.
Serves 8-12
