Creamy Cauliflower with Cheese & Dill

Mashed Cauliflower with Cheese & Dill

This is a great Thanksgiving side dish for all you vegetable lovers out there! I think that regular old steamed vegetables are boring. If I’m going to eat the 5 servings of vegetables that are recommended each day then I need a few vegetable recipes to break up that boredom. This is one of those recipes. It’s not something I make all the time but it’s a nice treat and adds some variety to my usual vegetable selections. This dish is also good for folks following a low-glycemic index diet like the South Beach diet.

1 large head of cauliflower (4-5 cups of florets or the frozen equivalent)
1 T. butter
1 t. dried dill weed
a squeeze of lemon juice
3/4 C. grated cheese ( any kind you like will work – I used cheddar)
salt & pepper to taste

1. Wash and core the cauliflower and cut into small florets.
2. Place a couple of inches of water in a large pot along with some salt and the cauliflower. Bring to a boil and cook until the cauliflower is quite soft, about 20 minutes.
3. Pour the cauliflower into a colander and drain well.
4. When the cauliflower is drained well, put it back into the pot and add the butter, lemon juice, and dill. Mash well with a potato masher (I used my immersion blender). Add the cheese and a little milk if needed and mash again.
5. Taste and season with salt and pepper. Serve hot.
