Pub Cheese Spread

Well we’re on to New Year’s Eve goodies now that Christmas is over. This is a recipe that my brother-in-law, Ed, introduced to the McLaughlin clan at least 25 years ago. He learned how to make it from his mother, Viviene. The horseradish gives this cheese spread a bit of zip and makes it very flavorful. I love it with pretzels or stuffed in celery! Pictured above is a double batch. I made plenty so I could give some as a hostess gift along with a Christmas spreader. We also ate it with our leftover beef loin roast on sandwiches . . . delish!

2 lbs. Velveeta Cheese
3.75 oz. jar creamy horseradish
1 C. + 2 T. mayonnaise

1. Melt the cheese in a heavy saucepan over medium low heat. Stir constantly so it doesn’t scorch.
2. Stir in the horseradish and mayonnaise. Mix well.
3. Pour into crocks and cool.

Serve with crackers, bagel chips, pita chips, or pretzels or spread on sandwiches. It’s also good stuffed in celery. Pictured above is a double batch.
