Braised Beef Short Ribs

Tender, succulent, satisfying, comfort food all describe this fabulously tasty dish. This is perfect for a wonderful Valentine’s Day dinner if you have a beef lover in your life! Braising involves slow, moist cooking and the result is meat that falls off the bone and simply melts in your mouth. The fact that these are braised in a mixture of beef broth and red wine makes them especially flavorful.

If you have a large slow cooker you can cook these in it but I recommend that you brown the ribs and saute the vegetables before placing them in the cooker. I like to make these the traditional way by braising them in an enamel roaster with a tight fitting lid for three hours but have also made them in a slow cooker.

Ingredients
6 beef short ribs
2 large carrots, peeled and diced
2 stalks of celery, diced
1 large onion, diced
3 cloves of garlic, chopped
2 C. beef stock
2 C. dry red wine
salt & pepper to taste
2 T. olive oil

1. Preheat oven to 300 degrees.
2. Heat the olive oil in a roaster over high heat. Generously salt and pepper the ribs and add them to the roaster and brown on all sides. Remove from pan.

3. Add the carrots, celery, onion, and garlic to the pan and salt and pepper them. Saute until the onion is translucent.

4. Add the ribs back to the pan and pour in the beef stock and red wine. Bring to a boil. Cover with a tight fitting lid and place in the oven. Cook for 2 1/2-3 hours or until the meat is tender.

5. Remove the ribs to a plate and simmer down the pan juices to reduce and thicken them a bit.

6. Serve the ribs with mashed potatoes drizzled with the pan juices and vegetables.
Serves 4-6
