Banana Peanut Butter Bread

I love quick breads like this because they’re so fast and easy to make compared to most yeast breads that you have to let rise. All you have to do with quick breads is mix them up, pour them into the pan, bake, and voila, you have a moist and flavorful loaf of goodness!! Quick breads also freeze well so they’re great to make ahead and keep on hand for unexpected company.

1 1/2 cups mashed ripe bananas
1/3 cup plain yogurt
1/3 cup creamy all-natural peanut butter
3 tablespoons butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup ground flaxseed meal
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup chopped dry roasted peanuts

1. Preheat oven to 350 degrees.
2. Whisk together the flours, flaxseed meal, baking soda, and salt in a large bowl.
3. In a medium bowl, whisk together mashed bananas, yogurt, peanut butter and melted butter. Whisk in eggs and sugars until smooth and well blended.
4. Pour the wet ingredients into the larger bowl with the dry ingredients. Mix with mixer until well blended. Stir in the chopped nuts.
5. Pour the batter into a greased and floured 5 X 9 inch loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
6. Remove from the oven and allow to cool in the pan for 20 minutes before running a butter knife along the edges of the pan and inverting the bread onto a wire rack to cool completely.
