<p>My husband&#8217;s favorite fruit is blackberries so for his birthday dinner I decided to use some of the blackberries I had picked and froze over the summer and make blackberry trifle. I didn&#8217;t want to have any leftovers so I made each person their own trifle in a stemmed wine glass. It made a really nice presentation and was very easy to do. I&#8217;m sure this would work with frozen mixed berries as well.</p>
<p><strong>Ingredients</strong><br />
1 small pound cake, cubed<br />
1 large can of whipped cream<br />
4 C. frozen blackberries, thawed<br />
2 T. sugar<br />
1 T. lemon juice<br />
3 T. blackberry wine<br />
1 small pkg. of sugar-free cook and serve vanilla pudding made according to the package instructions and cooled.</p>
<p>Blend two cups of the thawed blackberries, sugar, lemon juice, and wine in a food processor until smooth. Mash the rest of the blackberries a little and add to the blackberry sauce.</p>
<p>Meanwhile, gently fold about 4 C. of whipped cream into the cooled pudding.</p>
<p>To assemble a trifle for each person, gather six stemmed wine glasses and place a layer of cubed pound cake in the bottom of each, followed by a layer of blackberry sauce, and then a layer of the vanilla-whipped cream mixture. Repeat these layers one more time and garnish with whipped cream and fresh blackberries.</p>
